The larger, poster size templates include the extra .125" bleed in the design (required/preferred by most professional printers). 
NOTE: You will receive a second 8x10" & 8.5x11”  template that does NOT include the bleed if you wish to print at home. You will need the “actual size” file to print and cut down properly (add crop marks if needed).
